elfen lied is prolly the best thing i've ever seen on a screen (if not poop-in-tube and eat-and-smear-poop-over-your-face porn isnt included that is), highly recommended for SOME people. It's not a perfect series tho, all characters besides from Lucy/Nyuu downright suck (no point arguing about that). Should always be watched alone in dark evenings to get the correct feeling First time i ever signed up on a forum was to ask if there was gonna be a second season of elfen lied. Appealed to me for sure.

Problem is you guys don't listen to the right Japanese music... the only really good mainstream example I can think of is Hikaru Utada. TM Revolution has some good music, X Japan is good if you like that sort of thing... Dragon Ash has like one or two good songs. Shizuka na Hibi no Kaidan Wo is a favorite of mine (and was surprised they used it in Battle Royale).
Can't just generalize... though it does help to know the language a bit.
Gotta say though, haven't been many anime I've really been psyched over... OH! The OVA's of Kenshin, the prequels... friggin' amazing... I cried at the end, both because it was really good and I just got dumped like two days prior.

Berserk's anime ending is basically a gigantic teaser. If you want a brief hint of what happens after the ending- watch the first episode of it again. If you truly want to experience Berserk, read the manga. It's super violent, and is really intriguing to read- and actually continues on past the ending of the anime.
Honestly, I hated Elven Lied. I think it's shit.
Gantz is what Elven Lied wants to be, but fails at horribly.
Gantz is relatively violence, violence, violence, violence. However, the atmosphere and art direction of it really impressed me- The main character seems human, and really does seem like your average person jammed into something as horrible as that situation.
If there's any non-violent anime that really impressed me though, it's probably Gankutsuou. It's basically a reimaging of Alexander Dumas's "Count of Monte Cristo", done in a very impressive art style. You have to see it to understand what I mean, but the style of it, along with the story (it's amazing, and you're always wanting to see what happens next) is what impressed me.
And for comedy, there are a ton of them- but if you like giant robot animes, Megas XLR has so many puns and parodies, it's awesome. Another favorite is Sexy Commando. It's freaking hilarious.

Giant Robo is good too... surprising, seeing as how it looks all childish that so many characters die horrible, horrible deaths.
Never saw Elfin Lied.
